Vlog: Shop Locally with Me as I Prepare for Visitors
Happy St. Patrick’s Day week!! I will be filming on St. Patrick’s Day at the Wexford parade and in the pubs. Check back next week for a snapshot of St. Patrick’s Day in Wexford, Ireland – now that I’ve shared my plan I better keep the Guinness consumption in check so the vlog is actually coherent. 😉
This week I am preparing for more visitors!! March is busy, this month alone we’re entertaining 19 days! Since no airline flies directly from Minneapolis to Ireland, door to door travel, barring delays, is around 18 hours. It’s a long day. And of course, the final two hours are the worst: the drive from Dublin to Wexford. You’re so close but so far.
So, when guests arrive I want to welcome them! Home cooked soup is my welcome meal!

Hamburger Noodle Soup
- Extra virgin olive oil, to coat the pot
- 1 onion chopped
- 3 celery stocks chopped
- 3 medium sized carrots chopped
- Salt to taste
- Pepper to taste
- 1 pound of ground beef
- 8- 10 cups of chicken stock (until pan is ¾ filled)
- 1.5 cups macaroni noodles
Preheat a dutch-oven over medium heat.
Add the oil then the chopped onion, celery, and carrot to the pot and sauté 10-15 minutes, until veggies are caramelized. Flavor with salt and pepper while cooking. Next add the ground beef. Break up and cook until beef is fully cooked (drain any excess fat). Add the chicken stock and bring the soup to a boil. Turn down to a simmer. Simmer for 10 minutes. Bring back up to a boil add noodles. Simmer until noodles are cooked. Serve with warm crusty bread. Enjoy!
